Postcards from Bunny: What makes the Perfect Brunch?


With the official brunching season upon us, Bunny and Brandy's expertise on the subject of brunching has been in high demand.  Recently, Our Ladies were tapped by their friends at ProFlowers.com to explain exactly what they think makes for the perfect brunch, so they've come up with a short, but precise little list, explaining for any chefs (be they amature or professional) what they should take into consideration when planning the perfect spring or summer brunch feast.

#1 The Cocktails
Coffee and tea are always options at brunch, but why waste the only meal that makes it acceptable to drink in the morning?  Tradition dictates that there are two types of brunchers: Bloody Mary Divas and Mimosa Debutaunts.  Brandy has always had a preference for the simplicity of the mimosa, especially when its done right with freshly squeezed orange juice, perfectly balanced by a splash of light, crisp champagne.  Bunny, on the other hand, always liked the adventure inherent in a bloody mary, where one is never certain of the exact amount of spice until the first sip is taken, not to mention the over the top garnishes.  But if there is one lesson Bunny and Brandy have learned over the last four years of brunch exploration, it is that there are actually so many more cocktails out there to be had for brunch with an infinite amount of ingredients and creativity to ignite the meal.  For springtime, Brandy recommends something refreshing and floral, like a St. Germaine cocktail, or something with fresh strawberry puree.

#2 The Appetizers
The best brunches are as decadent as they are intricate, so don't skimp on the amuse bouches and horderves just because its not dinner time.  After all, you're supposed to be eating two meals at once here, so why only go for an entree?  Bunny loves a good deviled egg as a brunch appetizer, or even a cool and crunchy salad.  If it's a cooler day, Brandy adores a nice little bowl of creamy soup and a hunk of hearty, buttered bread.

#3 The Entrees
Always have two entrees for brunch.  ALWAYS.  That isn't to say you have to finish both entrees yourself, but make sure there are always two options to share at the very least: a sweet and a savory.  Longtime readers of this blog will note that Bunny and Brandy often pair their favorite savory dishes (like Eggs Benedict or a sizzling steak skillet) with a sweet dish (like French toast or Pancakes).  This practice enhances the experience of both dishes, providing a way to cleanse the palate of something that is either deliciously saccharin or sinfully rich so that every bite can remain exciting and fulfilling.

#4 The Sides
When dining out, never discount the "Sides" portion of the menu.  Though a good pan fried potato or stack of truffled French fries can be delightful, often you will find more exciting and varied options than the standard spuds, which can be substituted for zero or very little extra charge.  Brandy has become a big fan of cheesy grits over the years and will often order a bowl to accompany her meals, while Bunny simply can't resit a freshly made biscuit with honey butter.  When serving brunch at home, try something a little different by sauteing up some brussel sprouts with bacon or creating a fruit cup from whatever looked best at your local farmer's market.

#5 The Dessert
You might be surprised to learn that both Bunny and Brandy consider dessert to be optional for brunch, if only because of the "Two Entree" rule.  Brunchers who have been following the guidelines correctly should already have had their sweet teeth satiated, but on the off chance there were no sweet entree options to be had, go ahead and order the most indulgent dessert on offer to make up for the loss.

#6 The Atmosphere
Sunlight and comfort are the only two essentials.  Though dining outside can have its charm, Bunny and Brandy have always found that just sitting near a sunny window and people watching during their meal can be the most relaxing way to spend a weekend morning.  As for table dressings, nothing elaborate is needed for such a casual meal, but a few flowers always help to brighten up even the cloudiest day.  A simple daisy in a bud vase can do wonders for a tiny table in a corner, so just imagine what kind of warm feelings a room full of flowers can invoke.

As you may remember, dear readers, last year Brandy started a new tradition: a little list looking back on some of her and her friends' favorite brunches in Chicago.  Brandy wished to update this database of excellence, if you will, but this year with the help of Foodie.com, we're bringing you the Best of Bunny and Brandy in a whole new way!

Foodie.com is a great new website and app for the food enthusiast.  There, members can make "collections" of their favorite recipes and restaurants, categorizing them however they like for easy browsing and sharing.

Guest Post: Best Bottomless Brunches

Greetings dear readers!  We have a special treat for you this week (we know how you all love special treats); a very special guest, Lizz Riggs from ChicagoTravler.com has penned us a list of her favorite Bottomless Chicago Brunches.  So without further ado, bottoms up!


Best of Brunch: Bottomless Boozing in Chicago

As Bunny and Brandy have proven, Chicago is a hot spot for brunch every weekend.  Whether you’re looking for a healthy way to start your Sunday or something to soak up the mistakes of the previous night, you can definitely find a wonderful spot to indulge one morning. When many people brunch, there’s something a little more important than the eggs and french toast. They’re looking for the bottomless booze. Who doesn’t love all you can drink bloody mary’s, mimosas and champagne? When you’re looking for the best bottomless cocktails on a Sunday morning, you can’t go wrong with these spots.

1. Angelina Ristorante is an Italian restaurant in Lakeview. They have a full brunch menu and the option of a champagne brunch that includes a dish from the menu and bottomless champagne drinks for $21 a person. Choose from a mimosa, Bellini, Kir Royale or just straight bottomless champagne if that’s more your style. You've got plenty of options for your meal, and all are bottomless and delish. They get pretty crowded for brunch, so it’s best not to come absolutely famished, because you might have to wait 20 minutes or so. Luckily, the wait is worth it, because on top of the champagne drinks you literally can’t get enough of, the food is amazing. I don’t eat eggs, so I’ve never personally tried any of those dishes on the menu, although I hear they’re amazing, but I have fallen victim to all of the pastas on the menu (a surprisingly perfect start to a Sunday morning), the delicious and fresh Bosco salad, and everyone’s favorite, the banana stuffed French Toast.

2. Broadway Cellars is a little farther North, but only by about 8 minutes up North Lakeshore Drive. They serve bottomless mimosas and bloody mary's for just $10, which is about what you pay for just one drink at some other places, so I’d say it’s well worth it. They have tons of menu items that I've heard rave reviews about, most of which have eggs, but there are a few things that I really love here. The apple pancakes are really delicious when you’re in the mood for something sweet, and the baked caprese sandwich is just right when you want something salty but meatless. And of course, they’re known for their wine, and even though there’s no bottomless option for that, they've got a great selection for sampling and wine pairings.

3. Lokal has the deal when it comes to bottomless booze. $7 for bottomless mimosas, but it has to be while you’re eating. If you finish your food and stick around to keep drinking, they charge you $2 per refill. They also have bottomless bloody mary’s ($9) and champagne ($12) but the mimosas are truly the real deal. I love a good beer on a Sunday morning too, and when I’m not in the mood for the standard brunch booze, Lokal has a great selection of beer on tap. The food on the menu here is not as elegant and delightful as many other places, but it’s good nonetheless. They have great sandwiches and I've always been intrigued (but never had the guts) to try the “cheese & pickles.” At least it’s always there for when a moment of adventure arises...

4. Deleece Grill Pub is another Lakeview favorite for bottomless mimosas. The wait is never as long here, and who can say no to mac and cheese? They serve it six ways! It’s $15 for the bottomless mimosas here, and a good selection of wines, beers and whiskeys for the non-mimosa-loving patrons in your party.

5. Victory’s Banner is a great spot in Roscoe Village for those who don’t want a hangover at 2pm on a Sunday, but still want bottomless drinks. They make their own Chai lattes from scratch, and you can get have all you can drink (hot or cold) for just $5. Personally, I’m a big fan of the blackened chicken wrap, but who doesn’t love a delicious chocolate chip waffle to go with all that Chai?

No matter where you do your brunching in Chicago, there are plenty of places to make it bottomless.

Best of Brunch: A Bunny and Brandy Retrospective

Greetings, dear readers!  As Brandy is constantly asked to name her favorite brunch spots, we thought we would put together a list of her all time favorites, along with those of her most cherished companions.  Enjoy, and be sure to tell us about your favorite brunch spots!

Birdie Brown
As a traveler of the world, Birdie loves a cultural brunch most of all, filled with new treats to try from exotic lands.
  1. Yoshi's Cafe: A unique blend of authentic Japanese food and French technique combine to make for an elegant and refreshing experience.  Birdie highly recommends the Japanese Breakfast, which consists of rice, fruit, veggies, soup, and a seasonal fish.
  2. Big Jones:  The closest you'll get to perfectly cooked crawfish in Chicago.  Makes a Southerner almost forget the snow and ice outside!
  3. Cafe con Leche:  A little taste of Cuba, here highlighted by Jibartito, a sandwich made with fried plantains instead of bread.  Not to mention some excellent coffee.
  4. Hearty Boys: American comfort food at its finest.  Birdie especially loves the Breakfast Corndog, a pancake batter encased sausage.  Simple yet satisfying!
  5. Ann Sather: Birdie loved being able to sample some Swedish favorites on the Swedish Breakfast Plate like the Swedish pancakes, meatballs, and potato sausage.  Also, CINNAMON ROLLS.  Enough said.





Birdie's Special Award
  • Most Unique Bebida: The Southern for the Walker Texas Ranger, a creative blend of Johnny Walker and Templeton Rye spiked with cherry tobacco. 
Biscuit Brown
Biscuit, unlike her husband, likes to be constantly reminded of her home land in the Bayou, so its no surprise to see a fair few Southern favorites in her list.
  1. Nana:  Simply the most divine Chicken and Waffles one could hope for, along with some killer Gingerbread Pancakes.
  2. The Southern: From the cocktails to the Breakfast Poutin to the House Made Bacon, there has never been a menu that offered Biscuit so many of her favorite things all at the same time.
  3. Hearty Boys: A favorite across the board, Biscuit's highlight was the Vermont Coffee, perfect for keeping the cold Chicago winter at bay.
  4. Big Jones: A lush atmosphere with fabulous food can make even the grumpiest brunch goer smile.
  5. Longman and Eagle: Biscuit adored their unique take on biscuits and gravy with just a touch of sweetness to keep things interesting.


















    Biscuit's Special Award
    • Best Bloody Mary: Longman and Eagle's Bloody Lawrence.  As the lady herself put it, "This is how a bloody Mary should taste!"




    Bunny
    Bunny, ever the stickler for sophistication, hardly ever gets to spend time in doors these days, as she assists her husband Benedict in his archaeological studies across the globe.  Its no wonder her choices reflect her desire for all things warm, familiar, and dazzling.
    1. Nana: Another perennial favorite of the bunch, not only does Nana have a fantastic Benedict (which is what Bunny bases any good brunch place on), but this is what brunch is all about- a warm, inviting, fun place to get a great meal and catch up with friends.     
    2. Nightwood: Three words- Butterscotch. Bacon. Donuts. No one can ever have enough of these sweet and savory treats.  Nightwood keeps their menu fresh with seasonal offerings like mouth watering duck quiche, but choices vary from week to week. 
    3. Bongo Room:  The White Chocolate Raspberry Cheesecake Pancakes are quite possibly the best pancakes Bunny has ever tasted. Indeed, she is still trying to recreate these on her own (with no luck as of yet). Although wait times on weekends can sometimes become in excess of an hour, this is one instance where the food is worth sticking in for the long haul.
    4. Hearty Boys: Yes, another vote for this Lakeview eatery, but this time with Bunny highlighting them for their Chicken and Waffles, which may be hersecond favorite brunch choice after that infamous egg dish. Hearty Boys delivers moist, well spiced chicken contrasted with a sweet and delicate waffle. 
    5. Deleece: Despite the giant piece of eggshell sitting atop Bunny's meal, the Lobster Benedict was a close second for the best Benedict Bunny has ever had. The lobster was generously portioned into succulent pieces of claw, with a sweet, truffle Hollandaise for dipping was just the right touch or opulence. 








    Bunny's Special Awards:
    • Best Brunch with a View: Signature Room with 360 degrees of windows for viewing the Chicago skyline at every angle.
    • Best Brunch with a Sense of Humor: Orange's Frushi and Green Eggs and Ham






    Brandy
    And now for the moment you've all been waiting for, from the eclectic Queen of Brunch herself, here are Brandy's choices for the Best Brunches in Chicago (Note: Though Brandy dearly loves some of her fellow brunch experts' choices, in the interest of variety, she has chosen to try and not double up on any of her predecessor's picks.)
    1. Owen and Engine: The quintessential British Brunch, complete with scones, clotted cream, perfect tea, and even home made Brown Sauce.  If Brandy were ever forced to brunch at only one spot in Chicago, this would be a very comfortable cage.
    2. Frog and Snail: Sophisticated, yet full of whimsy, Frog and Snail is one of those rare places that will convince you to like something you've never liked before.  Creative coffee drinks and amazingly indulgent desserts highlight this increasingly popular eatery.
    3. Vincent: There is literally no where else in Chicago where one can enjoy Fried Oysters and Snert or Pancakes with Kumquat Jam.  A truly unique and magical spot.
    4. Hot Chocolate: Though one would suspect Hot Chocolate is good at the sweet stuff, the savory entrees are also well thought out and perfectly executed.
    5. M Henrietta/Henry: Hearkening back to her very first brunch with Bunny, Brandy can still picture her beautifully plated Baked Egg and the scrumptious side of Bread Pudding.


    Brandy's Special Awards:
    • Best Fruit Cup- Tweet: Colorful, whimsical, and a good variety of tidbits.
    • Best Pancakes- Southport Grocery: No matter what you put on top of your pancakes, they will never beat the purity of these Bread Pudding Pancakes
    • Best French Toast- Socca: Brioche French Toast so soft you'd think it was Angel Food Cake, topped off with melty vanilla gelato.  Dessert for breakfast at its finest.
    • Best Mimosa- Blokes and Birds: Brandy simply adored how this mimosa came dressed almost like a Sangria with bits of fruit floating on top.









      Brandy's Sweet and Savory Awards:
      • Best Overall Sweet- Bang Bang Pie Shop: Biscuits and pie for brunch... when its done well, it cannot be questioned
      • Best Overall Savory- Takashi: Amazing bowls of noodles sitting in a broth of pure love can only be made better by a side of Duck Fat Fried Chicken.
